  • 2 tbsp Dijon mustard
  • 3 tbsp pure maple syrup
  • 2 medium sweet potatoes (about 1 lb), diced
  • 2 tsp olive oil
  • 1 tsp fresh rosemary, chopped
  • Salt and pepper, to taste

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Season chicken breasts with salt and pepper.
  3. In a bowl, whisk together Dijon mustard and maple syrup to make the glaze.
  4. Toss diced sweet potatoes in olive oil, salt, pepper, and rosemary; spread evenly on the prepared baking sheet.
