  • 1 lb baby potatoes
  • 1 cup freshly grated Parmesan cheese
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp dried thyme (or rosemary)
  • Salt & pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Rinse and scrub the baby potatoes, then cut them in half and place them in a large bowl.
  3. Drizzle the olive oil over the potatoes, then add garlic powder, dried herbs, salt, and pepper. Toss until evenly coated.
  4. Sprinkle the grated Parmesan cheese over the seasoned potatoes and toss again to coat.
  5. Arrange the potato halves cut-side down on the prepared baking sheet.
  6. Bake for 25-30 minutes or until golden brown and fork-tender.
