- 4 boneless, skinless chicken breasts
- 1 cup pesto sauce (homemade or store-bought)
- 8 oz fresh mozzarella cheese, sliced
- 1 cup cherry tomatoes, halved
- 1 cup dry white wine (Sauvignon Blanc recommended)
- 1/2 cup fresh basil leaves
- 2 tbsp extra virgin olive oil
- Salt and pepper, to taste
- 3 garlic cloves, minced
- 1/4 cup grated Parmesan cheese (optional)
Instructions
- Halve the cherry tomatoes and slice the mozzarella.
- Heat olive oil in a large skillet over medium heat. Season chicken with salt and pepper. Cook for about 5-7 minutes per side until golden brown.
- Once the chicken is cooked through, add minced garlic to the pan. Pour in white wine and scrape any browned bits from the bottom of the skillet. Simmer until reduced by half.
- Stir in pesto sauce and halved cherry tomatoes. Let simmer for 3-5 minutes until tomatoes soften slightly.
- Place mozzarella slices on top of the chicken; cover briefly until melted (about 2-3 minutes).
- Garnish with fresh basil leaves before serving.
