  • 4 boneless, skinless chicken breasts (1 lb)
  • 1 ripe pineapple, diced
  • 1 cup bell peppers (red or yellow), diced
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 cups long-grain or jasmine rice
  • ¼ cup low-sodium soy sauce
  • 2 tbsp honey or brown sugar
  • 1 tbsp sesame oil
  • 2 green onions, sliced for garnish

Instructions

  1. Prep all ingredients: chop chicken, dice pineapple and bell peppers; mince garlic and ginger.
  2. Heat sesame oil in a large skillet over medium heat. Add chicken and cook until golden brown, about 5-7 minutes.
  3. Stir in garlic, ginger, and bell peppers. Sauté for an additional 3 minutes until softened.
  4. Add pineapple, soy sauce, and honey; simmer for about 5 minutes until caramelized.
  5. Cook rice according to package instructions separately.
  6. Combine the cooked rice with the chicken-pineapple mixture; fold gently and serve hot garnished with green onions.
