- 4 boneless, skinless chicken breasts (1 lb)
- 1 ripe pineapple, diced
- 1 cup bell peppers (red or yellow), diced
- 3 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 2 cups long-grain or jasmine rice
- ¼ cup low-sodium soy sauce
- 2 tbsp honey or brown sugar
- 1 tbsp sesame oil
- 2 green onions, sliced for garnish
Instructions
- Prep all ingredients: chop chicken, dice pineapple and bell peppers; mince garlic and ginger.
- Heat sesame oil in a large skillet over medium heat. Add chicken and cook until golden brown, about 5-7 minutes.
- Stir in garlic, ginger, and bell peppers. Sauté for an additional 3 minutes until softened.
- Add pineapple, soy sauce, and honey; simmer for about 5 minutes until caramelized.
- Cook rice according to package instructions separately.
- Combine the cooked rice with the chicken-pineapple mixture; fold gently and serve hot garnished with green onions.
