  • 1 1/2 cups all-purpose flour

  • 1/2 tsp baking soda

  • 1/2 cup unsalted butter (softened)
  • 2 large eggs
  • 8 oz cream cheese (softened)
  • 2 cups powdered sugar
  • 1 tsp vanilla extract
  • 2 tbsp milk

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking pan or line it with parchment paper.
  2. In a large bowl, whisk together flour, baking powder, baking soda, cinnamon, and salt.
  3. In another bowl, beat granulated sugar, brown sugar, and softened butter until fluffy. Add pumpkin and eggs one at a time, mixing well after each addition.
  4. Gradually fold in dry ingredients into the pumpkin mixture until just combined.
  5. Pour the batter into the prepared pan and bake for 25-30 minutes or until a toothpick inserted comes out clean.
  6. While cooling, prepare the frosting by beating cream cheese, softened butter, powdered sugar, vanilla extract, and milk until smooth.
  7. Once cooled, frost your pumpkin bars and slice them into squares.
