  • 2 bay leaves
  • 3 cups low-sodium beef broth
  • 2 tbsp olive oil

Instructions

  2. Heat olive oil in a large Dutch oven over medium-high heat. Season beef shanks with salt and pepper, then sear until browned on all sides (about 4-5 minutes per side). Remove and set aside.

  4. Deglaze with red wine, scraping up browned bits from the bottom; simmer for about 5 minutes.
  5. Return shanks to the pot along with sliced carrots, thyme, bay leaves, and enough beef broth to cover almost all ingredients. Bring to a gentle boil.
  6. Cover tightly and transfer to the preheated oven. Braise for about 3 hours or until meat is fork-tender.
