Ingredients

  • 2 pounds sweet potatoes, peeled and thinly sliced
  • 1 cup heavy cream
  • 4 tablespoons unsalted butter
  • 2 cloves fresh garlic, minced
  • 1 cup sharp cheddar cheese, shredded
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh thyme (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Peel and slice the sweet potatoes into uniform rounds (about 1/8 inch thick).
  3. In a bowl, whisk together heavy cream, minced garlic, salt, pepper, and thyme if using.
  4. Grease a baking dish and layer half of the sweet potato slices at the bottom. Pour half of the cream mixture over them.
  5. Repeat with remaining sweet potatoes and cream mixture.
  6. Top with shredded cheddar cheese.
  7. Cover with foil and bake for 45 minutes. Remove foil and bake for an additional 15 minutes until golden brown and bubbly.
