  • 3 boneless, skinless chicken breasts (about 1.5 lbs), diced
  • 4 cloves fresh garlic, minced
  • 2 medium zucchinis, sliced into half-moons
  • 1 cup uncooked orzo pasta
  • 3 tbsp unsalted butter
  • 2 cups low-sodium chicken broth
  • ½ cup freshly grated Parmigiano-Reggiano cheese
  • 2 tbsp fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Prep your ingredients by dicing the chicken and slicing the zucchini.
  2. Heat a large skillet over medium heat and melt 1 tablespoon of butter. Add the diced chicken, season with salt and pepper, and sauté for about 6-8 minutes until golden brown and cooked through.
  3. Push the chicken to one side of the skillet, add minced garlic and zucchini on the other side. Cook for about 3-4 minutes until fragrant.
  4. Stir in uncooked orzo pasta and chicken broth; bring to a boil then reduce heat to simmer. Cover and cook for about 10 minutes until orzo is al dente.
  5. Remove the lid, add remaining butter and grated cheese, stirring until melted and creamy. Adjust seasoning if needed.
  6. Garnish with chopped parsley before serving.
