Ingredients

Scale
  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 3 cloves fresh garlic, minced
  • 1/2 cup creamy peanut butter
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp freshly squeezed lime juice
  • 2 tbsp brown sugar
  • 1/2 tsp red pepper flakes (adjust to taste)
  • 1 cup sliced bell peppers
  • 1 cup sliced carrots
  • Fresh cilantro for garnish
  • Cooked rice or noodles for serving

Instructions

  1. 1. Marinate the Chicken: In a bowl, mix soy sauce, lime juice, garlic, brown sugar, and red pepper flakes. Add chicken breasts and let marinate for at least 30 minutes.
  2. 2. Cook the Chicken: Heat oil in a skillet over medium-high heat. Add marinated chicken and cook until golden brown (7–10 minutes), ensuring it's cooked through.
  3. 3. Create the Peanut Sauce: In another saucepan on low heat, combine peanut butter with water to thin. Stir in additional soy sauce and lime juice until smooth.
  4. 4. Add Veggies: During the last 5 minutes of cooking the chicken, add sliced bell peppers and carrots to the skillet; sauté until tender yet crisp.
  5. 5. Serve: Layer rice or noodles on plates, top with chicken and veggies, drizzle with peanut sauce, and sprinkle cilantro before serving.
