  • 2 cups rotini pasta
  • 1 cup roasted corn (fresh off the cob)
  • 1 cup cherry tomatoes (halved)
  • ½ cup cilantro (chopped)
  • ¼ cup red onion (finely diced)
  • ¼ cup lime juice (freshly squeezed)
  • ½ cup mayonnaise
  • ½ cup feta cheese (crumbled)
  • 1 tsp chili powder
  • Salt and pepper to taste

Instructions

  1. Boil salted water in a large pot. Add rotini pasta and cook until al dente according to package instructions. Drain and rinse under cold water.
  2. Grill fresh corn over medium-high heat, turning occasionally until charred, about 10 minutes. Cool and slice off kernels.
  3. In a large bowl, combine cooled pasta, corn kernels, halved cherry tomatoes, diced red onion, chopped cilantro, crumbled feta cheese, lime juice, mayonnaise, chili powder, salt, and pepper.
  4. Use tongs to mix gently until well combined. Adjust seasoning as desired.
  5. Cover and refrigerate for at least 30 minutes before serving to let flavors meld.
