- 8 oz fusilli pasta
- 1/2 cup sun-dried tomatoes in oil, chopped
- 1/2 cup fresh basil, chopped
- 1/4 cup extra virgin olive oil
- 1/3 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 2 tbsp lemon juice
- Salt and pepper to taste
Instructions
- Cook the pasta in salted boiling water until al dente (8-10 minutes). Drain but do not rinse.
- In a bowl, whisk together olive oil, minced garlic, lemon juice, salt, and pepper.
- In a large mixing bowl, combine the drained pasta with sun-dried tomatoes and fresh basil.
- Pour dressing over the pasta mixture and add grated Parmesan cheese. Toss until evenly coated.
- Chill in the refrigerator for at least 30 minutes before serving.
