  • 8 oz fusilli pasta
  • 1/2 cup sun-dried tomatoes in oil, chopped
  • 1/2 cup fresh basil, chopped
  • 1/4 cup extra virgin olive oil
  • 1/3 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 2 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  1. Cook the pasta in salted boiling water until al dente (8-10 minutes). Drain but do not rinse.
  2. In a bowl, whisk together olive oil, minced garlic, lemon juice, salt, and pepper.
  3. In a large mixing bowl, combine the drained pasta with sun-dried tomatoes and fresh basil.
  4. Pour dressing over the pasta mixture and add grated Parmesan cheese. Toss until evenly coated.
  5. Chill in the refrigerator for at least 30 minutes before serving.
