  • 4 large sweet potatoes (about 2 lbs), peeled and cubed
  • 1/2 cup brown sugar (light)
  • 1 cup chopped pecans
  • 1/4 cup unsalted butter, melted
  • 3/4 cup whole milk (or almond milk)
  • 1 tsp cinnamon
  • 1 tsp pure vanilla extract

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Boil sweet potatoes in salted water until fork-tender, about 15-20 minutes.
  3. Drain and return potatoes to pot; add butter, brown sugar, cinnamon, milk, and vanilla. Mash until smooth.
  4. Fold in half of the chopped pecans.
  5. Transfer to a greased baking dish; top with remaining pecans.
  6. Bake for 25-30 minutes or until golden brown around the edges.
