Ingredients

  • 2 medium zucchinis
  • 1 cup ricotta cheese (whole milk)
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup marinara sauce
  • 1/4 cup fresh basil leaves, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Slice zucchinis lengthwise into thin strips.
  3. In a bowl, mix ricotta, half of the mozzarella, Parmesan, basil, salt, and pepper until well combined.
  4. Place two tablespoons of the filling at one end of each zucchini strip and roll tightly.
  5. Spread marinara sauce on the bottom of a baking dish and arrange rolled zucchini seam-side down.
  6. Pour remaining marinara over the rolls and top with the rest of the mozzarella.
  7. Cover with foil and bake for 25 minutes; remove foil and bake an additional 15 minutes until golden.
