  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 medium summer squash (zucchini or yellow squash), spiralized
  • 1/4 cup fresh basil, chopped
  • 1/4 cup fresh parsley, chopped
  • 8 oz halloumi cheese, sliced
  • 3 tbsp olive oil
  • 3 cloves garlic, minced
  • Juice of 1 lemon

Instructions

  1. Prepare the ingredients by washing and spiralizing the summer squash.
  2. In a bowl, combine olive oil, minced garlic, lemon juice, salt, and pepper. Marinate the chicken in this mixture.
  3. Heat a skillet over medium-high heat and cook the marinated chicken for about 5-7 minutes on each side until golden brown and cooked through (internal temperature of 165°F).
  4. Remove the chicken and fry sliced halloumi in the same skillet for about 2-3 minutes on each side until golden.
  5. Add spiralized squash and herbs to the skillet; sauté gently for 3-4 minutes until tender-crisp.
  6. Slice the chicken and toss everything together in the skillet before serving.
