- 1 cup orzo pasta
- 4 cloves fresh garlic, minced
- 1 medium cucumber, grated
- 1 cup Greek yogurt (full-fat)
- 2 tbsp lemon juice (freshly squeezed)
- 2 tsp dried oregano
- 2 tbsp extra virgin olive oil

- Heat olive oil in a large skillet over medium heat. Sauté chicken until golden brown, about 6-7 minutes per side.
- Add orzo around the chicken and pour in enough chicken broth to cover the orzo.
- Cover and simmer for 10-12 minutes until orzo absorbs most liquid, stirring occasionally.
- Meanwhile, mix Greek yogurt, grated cucumber (squeeze out excess water), minced garlic, lemon juice, salt, and pepper in a bowl to make tzatziki.
- Once cooked through, remove from heat and top with tzatziki sauce before serving.
