  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup orzo pasta
  • 4 cloves fresh garlic, minced
  • 1 medium cucumber, grated
  • 1 cup Greek yogurt (full-fat)
  • 2 tbsp lemon juice (freshly squeezed)
  • 2 tsp dried oregano
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Season chicken breasts with salt, pepper, and dried oregano. Let marinate.
  2. Heat olive oil in a large skillet over medium heat. Sauté chicken until golden brown, about 6-7 minutes per side.
  3. Add orzo around the chicken and pour in enough chicken broth to cover the orzo.
  4. Cover and simmer for 10-12 minutes until orzo absorbs most liquid, stirring occasionally.
  5. Meanwhile, mix Greek yogurt, grated cucumber (squeeze out excess water), minced garlic, lemon juice, salt, and pepper in a bowl to make tzatziki.
  6. Once cooked through, remove from heat and top with tzatziki sauce before serving.
