  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup panko breadcrumbs
  • ½ cup freshly grated Parmesan cheese
  • 2 tsp garlic powder
  • 2 tsp smoked paprika
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C) and spray a baking dish with nonstick cooking spray.
  2. In a bowl, mix panko breadcrumbs, Parmesan cheese, garlic powder, smoked paprika, salt, and pepper.
  3. Pat chicken breasts dry; dip each in olive oil then coat with the breadcrumb mixture.
