  • 2 packs instant ramen noodles
  • 2 cups mixed vegetables (fresh or frozen, e.g., bell peppers, carrots, broccoli)
  • 3 cloves garlic, minced
  • ¼ cup low-sodium soy sauce
  • 1 tsp sesame oil
  • 2 green onions, chopped
  • 2 eggs (optional)
  • 1 tbsp sriracha sauce (adjust to taste)
  • 1 tbsp cornstarch mixed with 2 tbsp water

Instructions

  1. Prepare your chicken by cutting it into bite-sized pieces.
  2. Heat sesame oil in a large skillet over medium-high heat and cook the chicken until golden brown (5-7 minutes).
  3. Add mixed vegetables and minced garlic; sauté for another 3-4 minutes until veggies are tender but crisp.
  4. Cook ramen noodles according to package instructions; drain and reserve some pasta water.
  5. In a bowl, combine soy sauce, sriracha, and cornstarch mixture. Pour over chicken and veggies.
  6. Add drained noodles to the skillet; toss everything together for about 2-3 minutes until well combined.
