  • 4 bone-in short ribs (2.5 lbs)
  • 2 tbsp olive oil
  • 1 large yellow onion, chopped
  • 2 medium carrots, chopped
  • 2 stalks celery, chopped
  • 4 cloves garlic, minced
  • 2 cups red wine
  • 2 cups low-sodium beef broth
  • 2 tbsp tomato paste
  • 2 bay leaves
  • 3 sprigs fresh thyme

Instructions

  1. Preheat oven to 300°F (150°C). In a Dutch oven, heat olive oil over medium-high heat; sear short ribs until browned on all sides (about 3-4 minutes per side). Remove and set aside.
  2. In the same pot, add onions, carrots, celery, and garlic; sauté until softened (5-7 minutes).
  3. Pour in red wine to deglaze the pan, scraping up any bits; let simmer for about 10 minutes.
  4. Return short ribs to pot along with beef broth, tomato paste, bay leaves, and thyme. Bring to a gentle boil.
  5. Cover tightly and transfer to the oven; braise for about 3 hours or until tender.
  6. Let rest for 15 minutes before serving; discard bay leaves and thyme sprigs.
