  • 2 salmon fillets (6 oz each)
  • 1 cup instant couscous
  • 4 tbsp unsalted butter, softened
  • 2 cloves garlic, minced
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh dill, chopped
  • 1 tbsp fresh thyme, chopped
  • Zest and juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, mix softened butter with garlic, herbs, lemon zest, salt, and pepper until creamy.
  3. Prepare couscous according to package instructions; fluff and season lightly.
  4. Cut parchment paper into squares. Place couscous in the center, top with salmon fillet.
  5. Add herb butter on salmon. Fold and crimp edges of parchment securely.
  6. Bake for 15-20 minutes or until salmon flakes easily.
  7. Serve immediately by opening packets at the table.
