  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 3 cloves fresh garlic, minced
  • 1 cup keto BBQ sauce (low-sugar)
  • 2 cups shredded sharp cheddar cheese
  • 2 cups cauliflower rice
  • 2 green onions, sliced
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet over medium heat, heat olive oil. Add diced chicken breasts seasoned with salt and pepper; cook until browned and no longer pink (about 6-8 minutes). Stir in minced garlic until fragrant (about 1 minute).
