  • 1 lb boneless ribeye steak, cut into bite-sized pieces
  • 4 medium russet potatoes, diced (about 4 cups)
  • 1 large green bell pepper, diced
  • 1 large sweet onion, diced
  • 3 cloves garlic, minced
  • 2 cups low-sodium beef broth
  • 8 oz cream cheese, softened
  • 1 cup shredded provolone cheese
  • 1 cup shredded mozzarella cheese

Instructions

  1. Sauté onions and green bell peppers in a skillet over medium heat until softened (about 5 minutes).
  2. Add chopped ribeye and minced garlic; cook until the meat is browned but not fully cooked (3-4 minutes).
  3. In a crockpot, layer half the diced potatoes followed by the meat mixture and half of the cheeses. Repeat layers.
  4. Pour beef broth over the layers.
  5. Cook on low for 6-8 hours or high for 3-4 hours until potatoes are tender and cheese is bubbly.
