  • 4 boneless, skinless chicken breasts
  • 6 cups fresh romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1 cup corn kernels (fresh or frozen)
  • 1 can (15 oz) black beans, rinsed and drained
  • ½ red onion, thinly sliced
  • 1 ripe avocado, diced
  • ½ cup fresh cilantro, chopped
  • Juice of 2 limes
  • 3 tbsp extra virgin olive oil
  • 1 tsp cumin powder
  • ½ cup salsa dressing (or homemade)

Instructions

  1. Preheat grill or skillet over medium-high heat. Season chicken breasts with salt, pepper, and cumin powder.
  2. Grill or pan-cook chicken for about 6-7 minutes per side until golden brown and juices run clear. Remove from heat and let cool slightly before slicing.
  3. In a large bowl, combine chopped romaine lettuce, halved cherry tomatoes, corn kernels, black beans, red onion slices, diced avocado, and chopped cilantro.
  4. Top the salad with sliced chicken. Drizzle lime juice and salsa dressing over the salad and toss gently to coat.
  5. Serve immediately in bowls or plates. Garnish with additional cilantro or cheese if desired.
