Ingredients

  • 1 cup fresh green beans
  • 1 cup cherry tomatoes, halved
  • 2 cups new potatoes, quartered
  • 1 can (5 oz) good-quality tuna, drained
  • 2 hard-boiled eggs, halved
  • 1/2 cup Kalamata olives
  • 1/4 cup fresh basil, chopped
  • 1/4 cup fresh parsley, chopped
  • 3 tbsp extra virgin olive oil
  • 1 tbsp vinegar (red wine or balsamic)
  • Salt and pepper to taste

Instructions

  1. Wash and trim the green beans; halve the cherry tomatoes.
  2. Boil new potatoes in salted water until fork-tender (about 15 minutes). Drain and cool slightly before slicing.
  3. Blanch green beans in boiling water for 3-4 minutes; transfer to ice water to maintain color.
  4. Hard-boil eggs by covering with cold water, bringing to a boil, then letting sit covered off heat for 10-12 minutes. Cool under cold water and peel.
  5. In a large bowl, combine potatoes, green beans, tomatoes, olives, tuna (drained), and chopped herbs. Gently toss.
  6. Drizzle olive oil and vinegar over the salad; season with salt and pepper. Serve immediately or chill for 30 minutes to enhance flavors.
