- 2 cups chopped fresh carrots
- 2 cups chopped celery
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 tsp dried thyme
- 4 cups low-sodium chicken broth
- 2 cups dumpling mix
- 3/4 cup whole milk
- 3 tbsp unsalted butter
- Salt & pepper to taste
Instructions
- Chop chicken into bite-sized pieces and dice the vegetables.
- In a large pot over medium heat, melt butter. Sauté onion, garlic, carrots, and celery until onions are translucent (about 5 minutes).
- Add chicken pieces; cook until they turn white (3–4 minutes). Pour in chicken broth and add thyme, salt, and pepper. Bring to a gentle boil.
- In a bowl, mix dumpling mix with milk until just combined.
- Drop spoonfuls of dumpling batter onto the boiling mixture. Cover and steam for about 15 minutes without lifting the lid.
- Serve hot in bowls; garnish with fresh parsley if desired.
