  • 4 boneless, skinless chicken breasts
  • 8 oz thinly sliced ham
  • 6 oz Swiss cheese
  • 1 cup seasoned bread crumbs
  • 2 large eggs
  • 1 cup all-purpose flour
  • 2 tbsp butter
  • 4 slices of ciabatta or sourdough bread

Instructions

  1. Preheat the oven to 375°F (190°C). Pound chicken breasts to about 0.5 inches thick.
  2. Set up three shallow dishes: one with flour seasoned with salt and pepper, one with beaten eggs, and one with bread crumbs mixed with grated Parmesan.
  3. Dredge each chicken breast in flour, dip in egg, then coat with breadcrumbs.
  4. In a skillet over medium heat, melt butter and fry each chicken breast for 3-4 minutes per side until golden brown.
  5. Transfer the fried chicken to a baking sheet and bake for 15 minutes until cheese is melted and chicken is cooked through.
  6. Assemble by placing the chicken between toasted bread slices, adding lettuce if desired.
