- 3–4 boneless, skinless chicken breasts (about 1 lb)
- 9 no-boil lasagna noodles
- 1 cup ricotta cheese
- 2 cups shredded mozzarella cheese
- ½ cup freshly grated Parmesan cheese
- 2 cups fresh or frozen spinach
- 3 cloves garlic, minced
- 28 oz can crushed tomatoes
- 1 tsp Italian seasoning
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Chop garlic and rinse spinach if using fresh.
- Heat olive oil in a large skillet over medium heat. Add diced chicken breasts, seasoning with salt and pepper. Cook until browned (5-7 minutes).
- Stir in minced garlic and spinach, cooking until fragrant and spinach wilts (2-3 minutes).
- Pour in crushed tomatoes and add Italian seasoning. Simmer for about 10 minutes.
- Begin layering with noodles, dollops of ricotta cheese, and mozzarella cheese until all ingredients are used.
