- 1 cup bell peppers (diced)
- 1 small onion (diced)
- 1 cup fresh spinach (chopped)

Instructions
- Dice the bell peppers and onion. Rinse and chop the spinach.
- In a non-stick skillet, heat olive oil or butter over medium heat. Sauté onions and peppers until softened (about 3 minutes).
- Add spinach to the skillet and season with salt and pepper; cook until wilted.
- In a bowl, whisk eggs until frothy. Pour over the sautéed veggies in the skillet.
- Cook undisturbed for about 3-4 minutes until edges set.
- Sprinkle cheese on one half of the omelette, fold the other half over, and cook for another minute until cheese melts.
- Slide onto a plate, garnish with herbs if desired, and serve warm.
