  • 4 large eggs
  • 1 cup bell peppers (diced)
  • 1 small onion (diced)
  • 1 cup fresh spinach (chopped)
  • ½ cup cheese (cheddar or feta, shredded)
  • 2 tsp olive oil or butter
  • Salt & pepper to taste
  • Fresh herbs (optional)

Instructions

  1. Dice the bell peppers and onion. Rinse and chop the spinach.
  2. In a non-stick skillet, heat olive oil or butter over medium heat. Sauté onions and peppers until softened (about 3 minutes).
  3. Add spinach to the skillet and season with salt and pepper; cook until wilted.
  4. In a bowl, whisk eggs until frothy. Pour over the sautéed veggies in the skillet.
  5. Cook undisturbed for about 3-4 minutes until edges set.
  6. Sprinkle cheese on one half of the omelette, fold the other half over, and cook for another minute until cheese melts.
  7. Slide onto a plate, garnish with herbs if desired, and serve warm.
