- 6 cloves fresh garlic, minced
- 1 cup pitted prunes
- 1 cup green olives, pitted
- 2 tbsp capers, rinsed
- 1/4 cup red wine vinegar
- 2 tsp dried oregano
- 2 tbsp brown sugar
- 1/2 cup low-sodium chicken broth
- 3 tbsp olive oil
Instructions
- In a large bowl, mix garlic, prunes, olives, capers, red wine vinegar, oregano, brown sugar, and olive oil.
- Add chicken breasts to the marinade and coat thoroughly. Cover or place in a ziplock bag and refrigerate for at least 2 hours or overnight for best flavor.

- Transfer marinated chicken and all ingredients to a baking dish. Pour chicken broth around the chicken.
