  • 1 (12-14 lb) whole turkey
  • 1 cup unsalted butter, softened
  • 6 cloves garlic, minced
  • 3 tablespoons fresh rosemary, chopped
  • 3 tablespoons fresh thyme, chopped
  • 3 tablespoons fresh sage, chopped
  • 2 medium sweet onions, chopped
  • 2 large carrots, chopped
  • 2 stalks celery, chopped
  • 2 cups low-sodium chicken broth
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 325°F (165°C). Remove the turkey from packaging and pat dry.
  2. In a bowl, combine softened butter with minced garlic and chopped herbs.
  3. Gently slide fingers under the turkey skin to separate it from the meat. Spread half of the herb mixture underneath the skin and rub remaining mixture over the turkey.
  4. In a roasting pan, place chopped onions, carrots, and celery as a base for the turkey. Position the turkey on top.
  5. Pour chicken broth into the pan and baste the turkey every 30 minutes during roasting.
  6. Roast until a meat thermometer reads 165°F (74°C) in the thickest part of the thigh. Let rest for at least 20 minutes before carving.
