- 1 (12-14 lb) whole turkey
- 1 cup unsalted butter, softened
- 6 cloves garlic, minced
- 3 tablespoons fresh rosemary, chopped
- 3 tablespoons fresh thyme, chopped
- 3 tablespoons fresh sage, chopped
- 2 medium sweet onions, chopped
- 2 large carrots, chopped
- 2 stalks celery, chopped
- 2 cups low-sodium chicken broth
- Salt and pepper to taste
Instructions
- Preheat oven to 325°F (165°C). Remove the turkey from packaging and pat dry.
- In a bowl, combine softened butter with minced garlic and chopped herbs.
- Gently slide fingers under the turkey skin to separate it from the meat. Spread half of the herb mixture underneath the skin and rub remaining mixture over the turkey.
- In a roasting pan, place chopped onions, carrots, and celery as a base for the turkey. Position the turkey on top.
- Pour chicken broth into the pan and baste the turkey every 30 minutes during roasting.
- Roast until a meat thermometer reads 165°F (74°C) in the thickest part of the thigh. Let rest for at least 20 minutes before carving.
