- 2 cups low-sodium beef broth
- 1 cup dry red wine
- 2 sprigs fresh thyme (or 1 tsp dried thyme)
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 325°F (160°C).
- Heat olive oil in a Dutch oven over medium-high heat. Sear short ribs on all sides until browned (4-5 minutes per side). Remove and set aside.
- Add onions and carrots to the pot; sauté until softened (5-6 minutes). Stir in minced garlic; cook until fragrant (30 seconds).
- Deglaze with red wine, scraping up brown bits, and let simmer for 3-4 minutes.
- Return short ribs to the pot, add beef broth and thyme, and bring to a simmer. Cover tightly with a lid.
- Transfer to the oven; braise for 2.5 to 3 hours until fork-tender.
- Let rest for 15 minutes before serving.
