  • 4 bone-in short ribs (about 3 lbs)
  • 2 medium yellow onions, chopped
  • 3 medium carrots, cut into chunks
  • 4 garlic cloves, minced
  • 2 cups low-sodium beef broth
  • 1 cup dry red wine
  • 2 sprigs fresh thyme (or 1 tsp dried thyme)
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 325°F (160°C).
  2. Heat olive oil in a Dutch oven over medium-high heat. Sear short ribs on all sides until browned (4-5 minutes per side). Remove and set aside.
  3. Add onions and carrots to the pot; sauté until softened (5-6 minutes). Stir in minced garlic; cook until fragrant (30 seconds).
  4. Deglaze with red wine, scraping up brown bits, and let simmer for 3-4 minutes.
  5. Return short ribs to the pot, add beef broth and thyme, and bring to a simmer. Cover tightly with a lid.
  6. Transfer to the oven; braise for 2.5 to 3 hours until fork-tender.
  7. Let rest for 15 minutes before serving.
