  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 8 oz fresh mozzarella, sliced
  • 2 large ripe tomatoes, sliced
  • 1 cup fresh basil leaves
  • 2 tbsp balsamic glaze
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C). Grease a baking dish with olive oil.
  2. Season both sides of the chicken breasts with salt and pepper.
  3. In a skillet over medium-high heat, heat olive oil until shimmering. Sear chicken for 4-5 minutes per side until golden brown.
  4. Layer each chicken breast with slices of mozzarella and tomatoes; sprinkle with salt and pepper.
  5. Transfer the skillet to the oven and bake for 20-25 minutes or until chicken reaches an internal temperature of 165°F (74°C) and cheese is bubbly.
