  • 4 boneless, skinless chicken breasts
  • 8 oz fresh mozzarella cheese, sliced
  • 4 ripe tomatoes, thickly sliced
  • 1 cup fresh basil leaves
  • ¼ cup balsamic glaze
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Lightly spray a baking dish with nonstick cooking spray.
  3. Season the chicken breasts generously with salt and pepper.
  4. Heat olive oil in a skillet over medium-high heat; sear each chicken breast for 4-5 minutes per side until golden brown.
  5. Transfer the seared chicken to the prepared baking dish and top with mozzarella and tomato slices.
  6. Drizzle with balsamic glaze and bake for 20 minutes or until the internal temperature reaches 165°F (74°C).
