Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a large bowl, cream together the softened butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition.
- Gradually mix in flour and baking powder until just combined; scrape down the sides of the bowl.
- Divide the dough into two portions: keep one plain and add cocoa powder and food coloring gel to the other.
- Roll out each portion between parchment paper to about ¼ inch thick; aim for rectangles.
- Layer one dough over another, then tightly roll from one end to form a log shape. Wrap in plastic wrap and chill for at least one hour.
- Slice the chilled log into ¼ inch rounds and place on prepared baking sheets. Bake for 10-12 minutes until lightly golden around the edges.
- Allow cookies to cool on wire racks before serving.
