  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp baking powder
  • 2 tsp vanilla extract
  • 2 tbsp cocoa powder (for chocolate layer)
  • Food coloring gel (red, green, or as desired)

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition.
  3. Gradually mix in flour and baking powder until just combined; scrape down the sides of the bowl.
  4. Divide the dough into two portions: keep one plain and add cocoa powder and food coloring gel to the other.
  5. Roll out each portion between parchment paper to about ¼ inch thick; aim for rectangles.
  6. Layer one dough over another, then tightly roll from one end to form a log shape. Wrap in plastic wrap and chill for at least one hour.
  7. Slice the chilled log into ¼ inch rounds and place on prepared baking sheets. Bake for 10-12 minutes until lightly golden around the edges.
  8. Allow cookies to cool on wire racks before serving.
