  • 4 large bell peppers (any color)
  • 1 cup cooked quinoa
  • 1 lb ground turkey or beef
  • 1 can (15 oz) black beans, rinsed
  • 1 cup diced canned tomatoes
  • 1 cup shredded cheddar cheese
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 tsp olive oil
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste

Instructions

  1. Gather all ingredients and chop the onion and garlic.
  2. In a skillet over medium heat, sauté onion in olive oil until translucent. Add garlic and cook for another minute.
  3. If not done already, rinse quinoa under cold water and cook according to package instructions (about 15 minutes).
  4. In a large bowl, combine cooked quinoa, sautéed onion-garlic mix, ground meat, black beans, diced tomatoes, cumin, chili powder, salt, and pepper.
  5. Cut the tops off the bell peppers and remove seeds. Stuff each pepper generously with the quinoa mixture.
  6. Place stuffed peppers upright in the Crockpot with a splash of vegetable broth at the bottom. Cover and cook on low for 6 to 8 hours or high for 3 to 4 hours until tender.
  7. About 15 minutes before serving, sprinkle cheddar cheese on top of each pepper and cover until melted.
