Ingredients

Scale
  • 1 cup quinoa
  • 1 cup cucumbers, diced
  • 1 cup cherry tomatoes, halved
  • 1 cup red bell pepper, diced
  • ½ cup red onion, finely chopped
  • ½ cup fresh parsley, chopped
  • Juice of 1 lemon (about 3 tbsp)

  4. In a large bowl, mix cooked quinoa with chopped veggies.
  5. Drizzle lemon juice and olive oil over the salad; season with salt and pepper. Toss gently to combine.
  6. Taste and adjust seasoning if necessary before serving.
