- 1 lb boneless, skinless chicken thighs
- 4 green onions, cut into 2-inch pieces
- 1/4 cup low-sodium soy sauce
- 2 tbsp sake or cooking wine
- 2 tbsp mirin
- 1 tbsp brown sugar
- 3 garlic cloves, minced
- 1 tsp fresh ginger, grated
- 1 tbsp toasted sesame seeds (for garnish)
Instructions
- In a bowl, whisk together soy sauce, sake, mirin, brown sugar, minced garlic, and grated ginger to create the marinade.
- Cut chicken thighs into bite-sized pieces and place them in a zip-top bag with half of the marinade. Marinate in the fridge for at least 30 minutes.
- Thread marinated chicken pieces onto soaked bamboo skewers alternating with green onion segments.
- Preheat your grill to medium-high (400°F/200°C).
- Grill skewers for about 4-5 minutes per side until golden brown and fully cooked. Brush with reserved marinade midway through grilling.
- Remove from heat and sprinkle with toasted sesame seeds before serving.
