  • 1 cup fresh corn kernels (grilled or boiled)
  • 1 cup shredded Monterey Jack cheese
  • 1 cup shredded cheddar cheese
  • ¼ cup fresh cilantro (chopped)
  • 2 tbsp lime juice (freshly squeezed)
  • ¼ cup mayonnaise
  • 1 tsp smoked chili powder
  • ½ cup sour cream

  2. In a saucepan over medium heat, melt Monterey Jack and cheddar with a splash of milk until creamy.
