  • 1 sheet puff pastry (thawed)
  • 1 cup fresh raspberries
  • 1/2 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 cup heavy cream
  • 4 egg yolks
  • 2 tbsp all-purpose flour
  • Powdered sugar (for dusting)

Instructions

  1. Preheat oven to 400°F (200°C). Roll out the thawed puff pastry on a floured surface and cut into rectangles.
  2. Place the pastry on parchment-lined baking sheets and bake for 15–20 minutes until golden brown. Cool completely.
  3. In a saucepan, heat heavy cream with granulated sugar and vanilla until warm. In another bowl, whisk together egg yolks and flour until smooth.
  4. Gradually add the warm cream mixture to the egg yolk mixture while whisking continuously. Return to the saucepan and cook until thickened.
  5. Fold in crushed raspberries into the cooled custard mixture and chill for at least one hour.
  6. Assemble by layering puff pastry rectangles with raspberry custard until desired height is reached. Dust with powdered sugar before serving.
