- 4 egg yolks

Instructions
- Preheat oven to 400°F (200°C). Roll out the thawed puff pastry on a floured surface and cut into rectangles.
- Place the pastry on parchment-lined baking sheets and bake for 15–20 minutes until golden brown. Cool completely.
- In a saucepan, heat heavy cream with granulated sugar and vanilla until warm. In another bowl, whisk together egg yolks and flour until smooth.
- Gradually add the warm cream mixture to the egg yolk mixture while whisking continuously. Return to the saucepan and cook until thickened.
- Fold in crushed raspberries into the cooled custard mixture and chill for at least one hour.
- Assemble by layering puff pastry rectangles with raspberry custard until desired height is reached. Dust with powdered sugar before serving.
