- 4 bone-in beef shanks (about 2.5 lbs total)
- 2 cups dry red wine
- 2 cups beef broth

- 2 sprigs fresh rosemary
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste

- Preheat oven to 325°F (160°C). In a large Dutch oven, heat olive oil over medium-high heat. Season beef shanks with salt and pepper, then sear until browned on all sides. Remove from pot.
- Add chopped onions and minced garlic to the pot; sauté for about 5 minutes until fragrant and golden.
- Return the beef shanks to the pot and pour in red wine, scraping up any browned bits from the bottom. Simmer gently for 10 minutes.
- Add beef broth until it covers half of the shanks, followed by chopped carrots, thyme, and rosemary. Bring back to a gentle simmer.
- Cover the pot and transfer it to the oven for 2-3 hours or until the meat is fork-tender.
