  • 4 boneless, skinless chicken breasts
  • 2 tbsp extra virgin olive oil
  • 4 soft pita breads
  • 1 cup bell peppers, chopped (mixed colors)
  • 1 cup cucumber, diced
  • 1 small red onion, chopped
  • 2 tsp garlic powder
  • 2 tsp smoked paprika
  • 1 tsp dried oregano
  • Juice of 1 lemon
  • 1 cup Greek yogurt
  • ½ cucumber (for tzatziki), grated and drained
  • Fresh dill (optional), for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, mix olive oil, garlic powder, paprika, oregano, lemon juice, salt, and pepper. Coat chicken breasts well; let marinate for at least 30 minutes.
  3. Chop bell peppers and onion; toss with olive oil and salt.
  4. Line a baking sheet with parchment paper. Place marinated chicken in the center and surround it with vegetables.
  5. Roast for about 25-30 minutes until chicken is cooked through (165°F internal temperature) and veggies are tender.
  6. For tzatziki, combine Greek yogurt, grated cucumber, garlic powder, lemon juice, dill (if using), salt, and pepper until smooth.
  7. Assemble pitas: fill each pita with roasted chicken and veggies; top with tzatziki.
