  • 4 boneless skinless chicken breasts (about 680g)
  • 2 medium zucchinis, sliced (about 300g)
  • 1/4 cup raw honey (85g)
  • 4 cloves garlic, minced
  • 3 tbsp low-sodium soy sauce (45ml)
  • 2 tbsp extra virgin olive oil (30ml)
  • 1 tsp smoked paprika (2g)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a bowl, toss chicken breasts with olive oil, salt, pepper, paprika, minced garlic, and soy sauce until well coated.
  3. Slice zucchini into half-moons and season with olive oil, salt, and pepper.
  4. In a separate bowl, whisk together honey and remaining soy sauce.
  5. Arrange the marinated chicken on one side of a large baking sheet and the zucchini on the other side. Drizzle honey-garlic sauce over both.
  6. Bake for 25-30 minutes until chicken reaches an internal temperature of 165°F (75°C) and zucchini is tender.
