- 1/4 cup raw honey (85g)
- 4 cloves garlic, minced
- 3 tbsp low-sodium soy sauce (45ml)
- 2 tbsp extra virgin olive oil (30ml)
- 1 tsp smoked paprika (2g)
- Salt and pepper to taste
Instructions
- Preheat your oven to 425°F (220°C).
- In a bowl, toss chicken breasts with olive oil, salt, pepper, paprika, minced garlic, and soy sauce until well coated.
- Slice zucchini into half-moons and season with olive oil, salt, and pepper.
- In a separate bowl, whisk together honey and remaining soy sauce.
- Arrange the marinated chicken on one side of a large baking sheet and the zucchini on the other side. Drizzle honey-garlic sauce over both.
- Bake for 25-30 minutes until chicken reaches an internal temperature of 165°F (75°C) and zucchini is tender.
