  • 2 cups fresh spinach
  • 1 cup cherry tomatoes, halved
  • 3 cloves garlic, minced
  • 2 tbsp extra virgin olive oil
  • 1/2 cup grated Parmesan cheese
  • 1/4 tsp red pepper flakes (optional)
  • Salt to taste

Instructions

  1. Cook the pasta in salted boiling water according to package instructions until al dente, usually about 8-10 minutes. Drain and reserve some cooking water.
  2. In a large skillet, heat olive oil over medium heat. Sauté minced garlic until fragrant, about 30 seconds.
  3. Add halved cherry tomatoes and red pepper flakes (if using). Cook for 5-7 minutes until the tomatoes burst and release their juices.
  4. Stir in fresh spinach and cook until wilted, about 2-3 minutes.
  5. Combine cooked pasta with the tomato-spinach mixture in the skillet, adding grated Parmesan cheese. Toss well and add reserved pasta water as needed to achieve a creamy consistency.
  6. Serve hot, garnished with extra Parmesan and freshly cracked black pepper.
