  • 4 cups sweet potatoes, peeled and cubed
  • 1/2 cup pure maple syrup
  • 1 cup toasted pecans, chopped
  • 1/2 cup brown sugar
  • 1 tsp ground cinnamon
  • 1/4 cup unsalted butter, melted
  • 2 large eggs
  • 1/2 cup whole milk

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. Boil the sweet potatoes in salted water until tender, about 15-20 minutes. Drain and mash.
  3. In the pot, mix mashed sweet potatoes with maple syrup, butter, milk, eggs, brown sugar, cinnamon, and salt until smooth.
  4. Pour the mixture into the baking dish and smooth the top.
  5. In a bowl, combine chopped pecans with the remaining brown sugar and melted butter. Sprinkle over the sweet potato layer.
