- 9 no-boil lasagna noodles
- 15 oz whole-milk ricotta cheese
- 2 cups fresh mozzarella cheese, sliced
- 2 cups fresh spinach, rinsed and chopped
- 1 cup cremini mushrooms, sliced
- 1 medium zucchini, diced
- 1/2 cup grated Parmesan cheese
- 3 cloves garlic, minced
- 1 tsp dried basil
- 1 tsp dried oregano
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet over medium heat, add olive oil and sauté minced garlic until fragrant. Add diced zucchini and sliced mushrooms; cook until tender.
- Stir in chopped spinach until wilted; season with salt and pepper. Remove from heat.
- In a bowl, mix ricotta cheese with half of the Parmesan cheese, adding basil, oregano, salt, and pepper.
- In a baking dish, spread marinara sauce at the bottom. Layer with no-boil noodles followed by half of the ricotta mixture, sautéed veggies, and mozzarella slices.
- Repeat layering with remaining ingredients, finishing with mozzarella on top and sprinkling remaining Parmesan cheese.
- Bake for 40 minutes until bubbly and golden.
