Ingredients
Scale
- 4 cups all-purpose flour
- 1 cup canned pumpkin puree
- ½ cup granulated sugar
- 2 tsp active dry yeast
- 2 tsp cinnamon (preferably Vietnamese)
- ½ cup melted butter
- 1 cup warm milk
- 2 large eggs
- 1 cup powdered sugar (for frosting)
- 1 tsp vanilla extract
Instructions
- In a small bowl, combine warm milk, granulated sugar, and active dry yeast. Let sit for 5 minutes until foamy.
- In a large bowl, whisk together flour, cinnamon, and salt. Create a well; add the yeast mixture, melted butter, and eggs. Mix until combined.
- Knead the dough on a floured surface for 8–10 minutes until smooth and elastic.
- Place in an oiled bowl, cover, and let rise in a warm place for about 1 hour or until doubled in size.
- Mix brown sugar and cinnamon for the filling. Once risen, punch down the dough and roll it out into a rectangle about ½ inch thick. Spread the filling evenly over the dough.
- Roll tightly from one edge to form a log; slice into equal pieces (about 1–2 inches each).
- Preheat oven to 350°F (175°C). Place rolls in a greased dish and bake for 25–30 minutes until golden brown.
- For frosting, mix powdered sugar with vanilla extract and enough milk for desired consistency; drizzle over warm rolls.
