  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 cups carrots, chopped
  • 2 cups celery, chopped
  • 1 medium yellow onion, diced
  • 4 cups low-sodium chicken broth
  • 1 cup dumpling mix (or homemade equivalent)
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Prepare the vegetables by chopping the carrots, celery, and onion into bite-sized pieces.
  2. Place the chopped vegetables at the bottom of the crockpot. Lay chicken breasts on top.
  3. Pour chicken broth over the mixture until just submerged. Sprinkle garlic powder, Italian seasoning, salt, and pepper on top.
  4. Cover and cook on low heat for 6-8 hours or high heat for 3-4 hours.
  5. Once cooked through, shred the chicken and return it to the pot. Prepare dumpling mix as per instructions.
  6. Drop spoonfuls of dumpling dough onto the hot mixture and cover again. Cook on high for an additional 30 minutes until fluffy.
  7. Serve hot, garnished with fresh parsley if desired.
