  • 8 oz rotini pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup bell peppers (red and yellow), diced
  • 1 cup corn kernels (fresh or frozen)
  • 1/2 cup red onion, diced
  • 1 can (15 oz) black beans, rinsed and drained
  • 1/4 cup fresh cilantro, chopped
  • Juice of 2 limes
  • 1/4 cup extra virgin olive oil
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste

Instructions

  1. Boil water in a large pot and add salt. Cook rotini according to package instructions until al dente (about 8-10 minutes). Drain and let cool slightly.
  2. While pasta cooks, chop cherry tomatoes, bell peppers, and red onion.
  3. In a large mixing bowl, combine cooled pasta with chopped vegetables, corn, and black beans.
  4. In a small bowl, whisk together lime juice, olive oil, cumin, chili powder, salt, and pepper.
  5. Pour the dressing over the pasta salad mixture and toss gently until well combined.
  6. Refrigerate for at least 30 minutes before serving to allow flavors to meld.
